Keto Garlic and Rosemary Dinner Rolls

Do you miss dinner rolls on keto? These Keto Garlic and Rosemary Dinner Rolls taste just like the real deal!

Keto Garlic and Rosemary Dinner Rolls

I’ve never really been a big-bread person, however, for holiday meals, there is nothing better than a warm, fresh-out-of-the-oven dinner roll. Especially when it is covered in butter, garlic, and fresh Rosemary.

I started making homemade bread rolls two years ago for our annual Christmas Dinner Party with friends. It’s like Friendsgiving, but it’s after Thanksgiving and before Christmas. They were delicious of course, but I felt like a cement block was in my stomach after eating a few because of all the gluten in them.

This year, I decided to make the entire menu Keto. Not because all of my friends are Keto, quite the opposite. I’m doing it because I want to show people that Keto is not restrictive or boring and that you can make anything Keto-friendly. I plan to blow my guests’ socks off with all the delicious Keto foods I am making, starting with these keto bread rolls.

Can You Eat Bread on Keto?

If you are following a keto diet, finding suitable substitutes for bread can be a challenge.

Traditional bread is high in carbs, which can kick you out of ketosis, making it essential to find a suitable alternative.

One of the most popular keto-friendly bread substitutes is fathead dough.

This versatile dough can be used to make pizza crust, bagels, and even dinner rolls. In this article, we will show you how to make keto dinner rolls with fathead dough.

What is Fat Head Dough?

If you’re following a low-carb or keto diet, you may have heard of a versatile dough called fathead dough. This dough is made from a few simple ingredients and can be used to make a variety of delicious low-carb baked goods, including pizza crusts, bagels, and bread.

So, what is fathead dough, and how is it made?

Fathead dough is a high-fat, low-carb dough that was invented by Tom Naughton, a filmmaker who created the documentary “Fat Head.” The dough is made from almond flour, shredded mozzarella cheese, cream cheese, and eggs, making it a great option for those who are gluten-free or following a ketogenic diet.

The ingredients in fathead dough work together to create a dough that is easy to work with, can be shaped into a variety of forms, and tastes delicious. The almond flour provides a low-carb alternative to traditional wheat flour, while the shredded mozzarella cheese and cream cheese give the dough a cheesy, slightly tangy flavor.

How Many Carbs Are In Fathead Dough?

Fathead dough is a popular low-carb, high-fat dough used in many recipes as a substitute for traditional high-carb doughs. It’s made with almond flour, mozzarella cheese, cream cheese, and eggs, and is known for its versatility and delicious taste.

Many people who follow a low-carb or ketogenic diet use fathead dough to create a variety of dishes, from pizza crusts to cinnamon rolls. But how many carbs are in fathead dough?

The number of carbs in fathead dough can vary depending on the specific recipe and the serving size. However, on average, fathead dough contains approximately 3-5 grams of carbs per serving.

This is significantly lower than the number of carbs found in traditional wheat-based doughs, which can contain up to 30-40 grams of carbs per serving.

The main ingredient in fathead dough is almond flour, which is a low-carb alternative to wheat flour. Almond flour contains fewer carbs and more healthy fats than traditional flour, making it an excellent choice for those who follow a low-carb or ketogenic diet.

However, it’s important to note that almond flour is also higher in calories than wheat flour, so portion control is key when using it in recipes.

In addition to almond flour, fathead dough also contains mozzarella cheese and cream cheese, which add flavor and texture to the dough.

These cheeses are also high in fat and protein, which are important macronutrients for those following a low-carb or ketogenic diet.

When using fathead dough in recipes, it’s important to keep track of the carb content of other ingredients that you may be adding.

For example, if you’re using fathead dough to make pizza, the sauce and toppings you choose can significantly increase the carb content of the final dish.

Opt for low-carb toppings like vegetables, meats, and cheeses to keep the overall carb count low.

In conclusion, fathead dough is a delicious and versatile low-carb alternative to traditional doughs.

It contains approximately 3-5 grams of carbs per serving, making it an excellent choice for those who follow a low-carb or ketogenic diet.

What are the best flour substitutes for making bread on Keto?

When following a ketogenic diet, finding suitable flour substitutes can be challenging, especially when it comes to baking bread.

Traditional bread recipes often use wheat flour, which is high in carbohydrates and not compatible with a keto diet.

Fortunately, there are several flour substitutes that can be used to make delicious keto-friendly bread. Here are some of the best flour substitutes for making bread on keto:

  1. Almond flour is an excellent keto-friendly substitute for wheat flour. It is made from ground almonds and is low in carbs and high in healthy fats. Almond flour has a slightly nutty taste, which works well in bread recipes. It also provides a moist texture to the bread, making it an ideal substitute for wheat flour.
  2. Coconut flour is another popular keto-friendly flour substitute that is ideal for making bread. It is made from ground coconut meat and is low in carbs, high in fiber, and gluten-free. Coconut flour is highly absorbent, which means it requires more liquid in recipes than other flours. It also has a slightly sweet taste, which works well in bread recipes.
  3. Psyllium husk is a plant-based fiber that is often used as a binding agent in keto bread recipes. It helps to create a bread-like texture and adds fiber to the bread, which can be lacking in a low-carb diet. Psyllium husk can be used in combination with other flour substitutes to create a more authentic bread texture.
  4. Flaxseed meal is another excellent keto-friendly flour substitute for making bread. It is made from ground flaxseeds and is high in fiber, healthy fats, and low in carbs. Flaxseed meal has a slightly nutty taste and works well in bread recipes. It also provides a dense texture to the bread, making it ideal for sandwich bread.
  5. Chia seed flour is another excellent flour substitute for making keto-friendly bread. It is made from ground chia seeds and is high in fiber, healthy fats, and low in carbs. Chia seed flour has a slightly nutty taste and works well in bread recipes. It also provides a moist texture to the bread, making it ideal for buns and rolls.

Tips For Making The Best Keto Dinner Rolls with Fathead Dough

  1. Use freshly grated mozzarella cheese: Pre-shredded cheese contains added starch to prevent clumping, which can add extra carbs to your recipe. Grate your own cheese to ensure it is keto-friendly.
  2. Let the dough rest: Fathead dough can be a little sticky and difficult to work with. Letting the dough rest for a few minutes can make it easier to shape.
  3. Use a cookie scoop: A cookie scoop can help you create evenly sized rolls, making them look more professional.
  4. Experiment with different flavors: You can add different herbs and spices to your keto dinner rolls to create different flavors. Try adding rosemary, thyme, or oregano for an extra burst of flavor.
  5. Serve warm: Fathead dinner rolls are best served warm. Reheat them in the oven or microwave for a few seconds before serving.

Keto Garlic and Rosemary Dinner Rolls

We are working on furnishing our dining room so we can expand, but who knows when that will happen? Anyways, back to the keto bread rolls!

Keto Garlic and Rosemary Dinner Rolls

The first time I made this keto bread recipe, I made a couple of mistakes that I am going to share with you not to make:

  • It’s imperative to use part-skim & low moisture mozzarella cheese. I used whole milk cheese, and the keto rolls spread out instead of rising
  • Also, to help them expand, make sure you put in the full four tablespoons of baking powder.
  • I refrigerated them for 20 minutes the second time, and they turned out better for me.
  • Watch the oven time. After just 20 minutes of baking, they will begin to brown on the top. The recipe says 20-25 minutes so don’t just set your timer to 25 minutes and walk away.

Besides that, this recipe is pretty straightforward. The base of the dough is the infamous “Fathead” dough that is commonly used for Keto Pizza, Keto Bagels, and anything else that requires a batter.

These aren’t very big. I recommend you roll fewer balls to get bigger rolls. I think 15-18 is a good number. Another thing I added was the garlic and rosemary on top. You can omit that if you so choose.

I will say, I tried a few Keto Rolls recipes, and so far, this one is my favorite. The texture and taste are as close as you are going to get to an authentic parker house dinner roll, low carb version of the course.

How Can I Store & Freeze These Keto Dinner Rolls?

Keto Fat Head Dinner Rolls are a great addition to any meal and can be stored and frozen for future use.

These rolls are low-carb, gluten-free, and made with ingredients like almond flour, mozzarella cheese, and cream cheese.

Here are some tips on how to store and freeze Keto Fat Head Dinner Rolls to maintain their freshness and taste.

Storing Keto Fat Head Dinner Rolls:

  1. Room Temperature: If you plan on consuming the rolls within 1-2 days, you can store them in an airtight container at room temperature. Make sure the container is sealed tightly to prevent any air from entering and drying out the rolls.
  2. Refrigeration: If you need to store the rolls for a longer period of time, you can refrigerate them for up to 5 days. Place the rolls in an airtight container or a plastic bag and store them in the refrigerator. Before consuming, bring them to room temperature or warm them up in the oven.

Freezing Keto Fat Head Dinner Rolls:

  1. Flash Freeze: To freeze the rolls, place them on a baking sheet lined with parchment paper and put them in the freezer for 1-2 hours until they are firm to the touch. This method will prevent the rolls from sticking to each other and will make it easier to remove them from the baking sheet.
  2. Vacuum Sealing: Once the rolls are frozen, you can vacuum-seal them in a freezer-safe bag or wrap them in plastic wrap and store them in a freezer-safe container. Make sure to label the bag or container with the date and the contents.
  3. Thawing: To thaw the rolls, remove them from the freezer and let them thaw at room temperature for about 30 minutes. If you are in a hurry, you can microwave them for a few seconds or warm them up in the oven.

By following these tips, you can store and freeze Keto Fat Head Dinner Rolls without compromising their taste and texture. These rolls are perfect for those who follow a keto or low-carb diet and are a great addition to any meal. Enjoy!

  1. I have two questions: the recipe calls for 4 teaspoons baking powder whereas your writeup says 4 tablespoons. I’m assuming teaspoons is correct? Also, the carb count. Is that total or net? When I input the recipe into MyFitnessPal it calculates 5 net carbs per roll.

    Thank you!
