I’ve never really been a big-bread person, however, for holiday meals, there is nothing better than a warm, fresh-out-of-the-oven dinner roll. Especially when it is covered in butter, garlic, and fresh Rosemary.

I started making homemade bread rolls two years ago for our annual Christmas Dinner Party with friends. It’s like Friendsgiving, but it’s after Thanksgiving and before Christmas. They were delicious of course, but I felt like a cement block was in my stomach after eating a few because of all the gluten in them.

This year, I decided to make the entire menu Keto. Not because all of my friends are Keto, quite the opposite. I’m doing it because I want to show people that Keto is not restrictive or boring and that you can make anything Keto-friendly. I plan to blow my guests’ socks off with all the delicious Keto foods I am making, starting with these keto bread rolls.

The first time I made this keto bread recipe, I made a couple of mistakes that I am going to share with you not to make:

  • It’s imperative to use part-skim & low moisture mozzarella cheese. I used whole milk cheese, and the keto rolls spread out instead of rising
  • Also, to help them expand, make sure you put in the full four tablespoons of baking powder.
  • I refrigerated them for 20 minutes the second time, and they turned out better for me.
  • Watch the oven time. After just 20 minutes of baking, they will begin to brown on the top. The recipe says 20-25 minutes so don’t just set your timer to 25 minutes and walk away.

Besides that, this recipe is pretty straightforward. The base of the dough is the infamous “Fathead” dough that is commonly used for Keto Pizza, Keto Bagels, and anything else that requires a batter.

These aren’t very big. I recommend you roll fewer balls to get bigger rolls. I think 15-18 is a good number. Another thing I added was the garlic and rosemary on top. You can omit that if you so choose.

I will say, I tried a few Keto Rolls recipes, and so far, this one is my favorite. The texture and taste are as close as you are going to get to an authentic parker house dinner roll, low carb version of the course.

Garlic Rosemary Butter 

  • 1 tbsp fresh rosemary, chopped
  • 1 clove of garlic, minced
  • 2 tbsp of butter


  1. Preheat the oven to 350° F.
  2. Melt the cream cheese and mozzarella together.
  3. Add to a large bowl along with the baking powder, almond flour, eggs, and pepper.
  4. Fold in fresh rosemary.
  5. Mix until smooth and let stand for 10 minutes.
  6. Roll into 12 balls and chill in the refrigerator for at least another 15 minutes.
  7. Melt the butter over low heat in a glass or ceramic baking pan
  8. Place the dough balls into the pan touching each other.
  9. Bake for 25 minutes until fluffy, golden brown, and cooked through.
  10. Melt butter in a small saucepan. Mix in fresh rosemary and garlic. Brush the butter on top of the rolls before serving.

  1. I have two questions: the recipe calls for 4 teaspoons baking powder whereas your writeup says 4 tablespoons. I’m assuming teaspoons is correct? Also, the carb count. Is that total or net? When I input the recipe into MyFitnessPal it calculates 5 net carbs per roll.
