Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp cumin
  • ½ tsp cayenne pepper
  • 1 lime, juiced
  • 1 small onion, sliced
  • 1 red pepper, sliced
  • 1 tbsp coconut oil
  • 2 cups cauliflower rice
  • 1 tbsp lime juice (for the cauliflower rice)
  • ¼ cup cilantro
  • salt
  • pepper

Instructions

1. Preheat the oven to 425°F.

2. Cut the chicken into cubes.

3. In a medium bowl, add the olive oil, minced garlic cloves, cumin, cayenne pepper, and lime juice. Season with salt and pepper and whisk to combine. Add chicken, sliced red pepper and sliced onion to the bowl. Toss well to combine.

4. Place on a sheet pan and cook for 20 minutes.

5. Take out of the oven and add the cauliflower rice. Drizzle melted coconut oil and lime juice on top and combine well. Season with salt and pepper.

6. Cook for another 10 minutes or until the rice starts to brown and chicken is cooked through, 165°F.

7. Garnish with fresh cilantro.
