Is there a more comforting breakfast than Biscuits and Gravy? I don’t think so. I never really ate Sausage Gravy growing up, and quite frankly I was never really a gravy fan until I got married to a “Southern boy.”

Ok, he isn’t southern-southern, but he grew up in Southern Ohio and played football in Mississippi, so he is a Hillbilly at heart. He goes bonkers for this meal.

I think the last two times I made this he ate half of the keto biscuits and gravy in one portion. I was like, dude, really? I just spend 30 minutes making this and you are going to eat it all in 3 minutes.

In all honesty, I don’t care, and I am happy that he enjoys the Keto recipe I make. He may be mad at me for calling him out on the internet, but he is too busy to read my blog posts anyway so if I’m lucky, he will never understand this.

The reason why this is one of his favorite low-carb meals is that it tastes exactly like the carb-loaded version of Biscuits and Gravy.

If you did a side-by-side comparison and I didn’t tell you which one was which, you would probably not be able to guess yourself. It’s that good.

The low-carb biscuits are light and fluffy, and the keto sausage gravy is rich and full of flavor. You can also add shredded cheese to the low-carb biscuits and make them “cheesy biscuits.” I made those one time, and they were so good!

What do you need to make these Low-Carb Biscuits?

To make these light and fluffy low-carb biscuits, in this recipe I used Almond Flour.

Almond Flour is the most commonly used keto substitute for flour. I also used 3 egg whites, Baking Powder, melted butter, salt, garlic, and chili powder.

Mix the dry ingredients first then add the wet ingredients.

For the wet ingredients, add the melted butter first before the egg whites. You should achieve a crumbly consistency for the mixture.

The most important step to making the low-carb biscuits light and airy is to whisk the egg whites until they are fluffy. Gently fold the egg whites into the flour mixture.

Scoop the mixture into the baking sheet and bake for 10-15 minutes until low-carb biscuits turn golden brown.

What do you need to make the Keto Sausage Gravy?

The Keto Sausage Gravy is such an easy recipe. You only need a few gravy ingredients and you can enjoy flavorful keto gravy in no time.

For this wonderful recipe, you need Breakfast Sausage, Cream Cheese, Heavy Cream, cup broth, and salt and pepper to taste.

Cook the Sausage in a medium saucepan over medium heat and set aside. In the same saucepan, add the Cream Cheese and Heavy Cream. Heat and whisk the mixture for 5 minutes. Add the Sausage and continue to whisk for 2-3 minutes until the Sausage Gravy is thickened.

Lastly, add the broth. And your Keto Sausage Gravy is ready!

How do you make the Sausage gravy thicker?

I like to add both heavy cream and cream cheese for the keto gravy because the cream cheese aids in thickening the sauce. If the sauce isn’t as thick as you would like it to be, you can add in some Xanthan Gum.

What is Xanthan Gum?

Xanthan Gum is a keto-approved thickener, but you have to be careful with the amount you use, or else you will turn the food into a giant glob. Speaking of which, I am laughing to myself right now because one time my husband tried making Keto Sausage Gravy, and he put a whole tablespoon of Xanthan Gum in it and RUINED it.

Here I am, making fun of him again, but it was hilarious. He had to throw the entire thing out because it tasted horrible and turned into a Sausage Gravy mold. He thought it was like using flour or cornstarch.

Nope. Not quite.

How to use the Xanthan Gum for the Keto Biscuits and Gravy?

If you are going to use Xanthan Gum for Keto Biscuits and Gravy, start with a minimal amount. I’m talking 1/2 tsp of Xanthan Gum and then working your way up, but I wouldn’t go past 1 tsp.

Keto Biscuits and Gravy

Ingredients

For the Sausage Gravy:

  • 1 lb Breakfast Sausage
  • 2 oz Cream Cheese
  • 1/2 cup Heavy Cream
  • 1/4 cup broth 
  • Salt and pepper to taste

For the biscuits:

Instructions

To make the sausage gravy:

  1. In a medium saucepan over medium heat, cook the Sausage. Set aside.
  2. To the same saucepan add in the cream cheese, heavy cream, and bring up the heat as you whisk the mixture. About 5 minutes.
  3. Add the sausage to the gravy and continue to whisk for 2-3 minutes until the Sausage Gravy is thickened.
  4. Add broth to thin it out.


To make the biscuits:

  1. Preheat the oven to 400 degrees and line or grease a muffin pan.
  2. In a medium bowl, combine the almond flour and baking powder. 
  3. Add in the salt, garlic powder, and chili powder and combine well. 
  4. Add in the cold butter and cut it into the mixture using two knives or a pastry cutter. The mixture should have a crumbly consistency. 
  5. Meanwhile, whisk the egg whites until they are fluffy. This is an important step to making the biscuits light and airy. 
  6. Gently fold the egg whites into the flour mixture. 
  7. Using a cookie scoop, scoop in the biscuit mixture into 8 muffin slots. 
  8. Bake for 10-15  minutes or until biscuits starts to get golden brown on top. 

Notes

If the Sausage Gravy isn't thickening as much as you would like, you can add in 1/2 tsp of Xanthan Gum. First, whisk in the Xanthan Gum with 1 tbsp of warm water in a separate bowl before adding it to the gravy.

  8. Susan, the biscuits would freeze well. They will last about 5 days without freezing. I’m not sure about the gravy. It may separate due to the fat content.

  9. This is THE BEST biscuits and gravy recipe EVER!! I’ve made it three times now and it doesn’t stay in the house more than 24 hours. The gravy is so creamy but does require a thickener (guar gum or xanthan gum) as I like thick gravy. I failed on the making biscuits but that was on me and not the recipe. They turned out as crumbles but everyone said they liked the crumbles better than a biscuit anyways so it was a win all around.

  10. This was delicious! I skipped the chili powder in the biscuits and added some sage to the gravy. I didn’t add the chicken broth and the gravy was still very creamy. The biscuits were perfect but the key is the whipped egg whites.

I didn’t use the chili powder, but that’s merely out of preference and I added a hefty amount of garlic powder to my gravy… again, preference!   16. Delicious. The biscuit turned out great. The only thing I might change is using half the amount of garlic for this particular recipe. But it I made the biscuits on their own I would keep the garlic. If you added more herbs and cheddar, they reminded me of red lobsters cheddar bay biscuits. Yummy. Oh the possibilities. Also the gravy was a little too salty. But that could be due to my own ingredients. Since there was salt in my chicken stock and my sausage, I think next time i will either not add more salt or use lower sodium ingredients. Thank you for this recipe, it definitely helps staying on Keto when there is recipes like this out there.

  18. This is so good, great flavor, I highly recommend!! Biscuits were light, I think the key is to to really whip the egg whites, love the hint of garlic & chilli powder. I used whipping cream in stead of heavy cream, since that was in the fridge. Gravy was a little thin, next time will try heavy cream or just add the thickening ingredient. Thank you for sharing!

  25. This the biscuits and gravy turned out well! The gravy really pulls through with this recipe. And the biscuits aren’t overly crumbly. However the biscuits are too salty. I’ll add less seasoning the next time I make it, so it can better fit my personal tastes. Other than that, I really like this recipe! Thank you!

  26. Absolutely delicious! My only comment would be that it was painfully salty and gave me headaches afterwards, but then again I can be sensitive to salt. I think the next time I make it will be without the added salt since the ingredients themselves should contain enough sodium. Definitely a recipe I’ve been sharing and recommending to everyone who wants a nice comforting (breakfast) meal.

  27. Loved this. Biscuits were great. I didn’t put in the chili powder as I am not a fan, I used onion powder instead. I didn’t need to thicken it at all. I also didn’t add salt because the sausage from the local store is always salty enough. Lots of pepper though! Definitely a keeper!

  29. You can try it but I’m not sure how they will turn out. I have not made this recipe with all coconut flour before so u can’t tell you how the end result will be.

  30. How fluffy do the egg whites in the biscuits need to be? Do I need to beat them till they form peaks?

  31. OMG this is sooooo good. But since I’ve made it a few times, I have made some changes, I omit the pepper flakes and garlic from the biscuits ( just my preference) . Instead of putting them in a tin, I use my silicon mat and shape them into biscuits, its works great ! For the gravy, I use an enamel cast iron skillet, that way the sausage bits stick to the pan- makes a better gravy !! I add tons more heavy cream ( so I have leftovers) and sage and garlic powder (preference again) . I found that when you boil heavy cream, it thickens naturally- no need for thickeners. I freeze the gravy into portions- that way I can have it throughout the week…..Thanks so much for this recipe- you rock !!!

  32. For those who want to know if the gravy freezes-YES. I just took mine out of the freezer ( I put them in mason jars) and it was great. Since. I’m single, I can’t eat all that I make. I added some more heavy cream and and some more cream cheese while I was reheating it (cause I LOVE the gravy) and just made fresh biscuits—it rocks !!!!

  34. I must’ve made a few critical errors. My biscuits are dense and didn’t rise well (perhaps I didn’t whisk the eggs long enough?) and I had to add more cream and cream cheese because it originally looked like white sausage. I’ll definitely have to try it a few more times to get it right!

  37. OMG!! This recipe is AWESOME!!! We come from a long line of biscuit and gravy eaters and this recipe was so much better than the original. I left out the salt totally in the gravy used half and half instead of cream, doubled the gravy ingredients and made the biscuits exact to your recipe. I got an “Excellent” all around. we are intermittent fosters so this was our dinner and I put a side of green beans with it , which went great.. Thank you for coming up with this!!!

  39. I didn’t try the biscuit recipe because I have a lot of carbquik, so I just used that. But the gravy was really amazing! I used turkey sausage and the flavor was amazing. 10/10 would make it again.

  41. Really great recipe. Suggestion- skip the broth. Instead drain the turkey sausage and add the liquid back in. This will further enhance the flavor.

  44. Should I be concerned that another woman has made my husband happy?😂 this recipe soothed our Texas hearts.. I modified to suit our palette such as adding bacon grease to the gravy (every Southern kitchen has that jar of bacon drippings, right?) I’ve been taught anytime you have any type of white sauce/gravy it’s a must to add white pepper. It was so flavorful that there was no need for the additional spices. I added cheese to the biscuit as you suggested, no spices. It was divine! Thanks!

  45. This is a great recipe. I didn’t have chicken stock. Used 1/4 cup water and tempered the egg yolks into the gravy. Thickened right up. No egg taste. Really great!
