Keto bread has been a favourite of mine ever since I started blogging, so I was super excited when Lesya said yes to this recipe. It’s secretly one of my favourite ways to enjoy keto bread… but shhhh, don’t tell my readers that!

Desserts are one of my favourite recipes to create. I’m that sort of person that will order sweet over savoury at any cost. I guess you’d say I have a bit of a nasty sweet tooth, but with all the keto-friendly sweeteners around these days, it hasn’t been a problem.

My mother used to bake a recipe very similar to this, and we called it bread and butter pudding. But because I live in Australia, and most “Aussies” are weird, nobody in the US could understand what recipe I was talking about.

Thus, this keto bread pudding was born. A delicious comfort food, designed to be served in the cooler months with a warm cup of tea, or coffee, if that’s your jam????

Keto Bread Pudding

Keto Bread Pudding

Yield: 12
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients

  • 12 Slices Keto Bread
  • 170ml cream (5.7 floz)
  • 170ml unsweetened almond milk (5.7 floz)
  • 3 X large eggs
  • 1 tsp vanilla extract
  • 1 Tbsp unsweetened cocoa nibs
  • 2 Tbsp granular erythritol
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger

Instructions

  1. Preheat your oven to 180C (355 F)
  2. Lay the 12 slices of keto bread into a 5” X 8” casserole dish, 6 slices at a time and covering with erythritol, cinnamon, ginger, and cocoa nibs.
  3. In a medium mixing bowl, mix the eggs, milk, cream and vanilla extract together.
  4. Pour over the bread and bake for 30 – 40 minutes until the egg mixture is fully cooked and no longer wobbles if moved around in the oven.
  5. Let it cool, and serve with fresh cream and berry compote

 

 

Notes

*If you want blueberry compote, simply bring ½ cup of berries and ¼ cup of water to boil in a pot, and mash together with a potato masher to create the compote.
