Fat bombs are a popular addition to the low-carb or keto diet

These tasty little morsels do double duty – they’ll round out your macros if you’re a little low on fats (it can be difficult some days to meet your fat percentage), and they are great at quelling cravings for unhealthy food or snacks.

They are also easy to customize, so you play around with flavors and textures to your heart’s content.

Fat bombs generally contain a combination of healthy fats, binders (such as almond flour), and flavorings. Sweet fat bombs may also have a sweetener added – such as xylitol or monk fruit sweetener.

Most fat bomb recipes are sweet (though certainly far less sweet than candy and chocolate), but you can also make savory fat bombs. 

I prefer to make sweet fat bombs because this way I can use them as a ‘dessert’. I don’t eat them every night, but on those days when I am especially craving something sweet, I’ll grab one.

This particular recipe is quite a change from what I have done before. I didn’t know it was possible to make a ‘white chocolate treat that was also keto-friendly.

The key to the white chocolate flavor in these White Chocolate Pecan Fat Bombs is the coconut manna and vanilla.

Coconut Manna?

Coconut Manna is also known as coconut butter. 

Coconut butter is made from the meat of the coconut and includes the actual coconut meat. It can be eaten as-is. Coconut oil and coconut manna are not the same things.

Coconut oil is oil that is extracted from the coconut. It is a versatile oil that can be used for cooking, baking, and even as a natural beauty product.

Coconut oil is rich in healthy saturated fats, including medium-chain triglycerides (MCTs), which can provide a source of energy for the body and support weight loss. It also contains antioxidants and antimicrobial properties that can help protect the body against harmful free radicals and infections.

There are many ways you can enjoy coconut manna. 

You can eat it straight out of the jar (my favorite), and you can warm it up and use it as a spread (excellent on low-carb scones or clean keto blueberry pancakes). You can also add it to smoothies, sauces, and dressings.

Well, it’s official, Clean Keto Reset and Keto Snacks and Drinks are out!! After two months of working on it for probably 80+ hours a week, I released my babies out into the wild.

I will be honest; I expected to experience relief and a sense of accomplishment, yet, I am sitting here more stressed out than before the E-books were out.

I wanted some snack options that were clean keto-approved, free of sweeteners, and not processed. The problem is those don’t exist.

After searching on Pinterest and Google and Instagram, I could not find any snacks that were Clean Keto approved! Everything I saw was either with cheese or sweeteners, especially any fat bomb recipe I came across.

Now, I get it; those recipes are meant to taste like a “keto treat” so that is why they have a ton of sweeteners and heavy cream in them, however, they don’t make me feel so great afterward.

I started thinking, and after discovering the unusual ingredient, Coconut Manna, which tastes sweet but has no sugar or sweetener in it, I created these White Chocolate Pecan Fat Bombs.

Yes, believe it or not, these fat bombs have zero sugar, zero refined carbohydrates, no dairy, and no artificial ingredients.

How do they taste though? They are freaking amazing!

Trust me, being the foodie that I am, I would never post a recipe to my blog that didn’t meet my standards for taste and quality. (they are pretty high because I am a food snob)

They are the white chocolate version of my Salted Fudge Fat Bombs minus the Pecans. If you haven’t tried the Fudge Fat Bombs yet, you NEED to. They are heavenly. Those are also free of sweeteners and Clean Keto approved.

My point in sharing this recipe is to tell you that you can still enjoy amazing snacks and “desserts” that are not only Keto-approved but are also free from dairy and free from any sugar or sweeteners.

Anyway, enough of that. Let’s get to the recipe!

Keto White Chocolate Pecan Fat Bombs

Yield: 10-12
Prep Time: 10 minutes
Inactive Time: 50 minutes
Total Time: 10 minutes

Ingredients

  • 1 cup Cocoa Butter
  • 1/2 cup Coconut Manna
  • 1 tsp vanilla 
  • 1/2 cup Coconut Flour
  • 1/2 cup Crushed Pecans 

Instructions

1. In a small saucepan, melt Cocoa Butter and Coconut Manna.

2. Add in the vanilla and stir.

3. Transfer to a medium glass bowl.

4. Place in the freezer for 10 minutes.

5. Take out from the freezer and stir in the coconut flour.

6. Place back into the freezer until mixture has set but is not completely frozen about 10 minutes.

7. Place crushed pecans in a small bowl.

8. With a small scoop, scoop out the mixture, roll it into balls, and dip it evenly into the crushed pecan.

9. Place back into the freezer until completely set 20-30 minutes.

 

Notes

Alternatively, you can pour the mixture into fat bomb molds and sprinkle the pecans on top or omit them altogether.
