- 1 head of Cauliflower
- 3 cloves of Garlic
- 1 small Shallot
- 2 tbsp Olive Oil
- 2 oz Parmesan Cheese
- 2 tbsp Thyme
- Preheat oven to 425°.
- Place cauliflower florets on a large rimmed baking sheet with onion, thyme, garlic, and oil; season with salt and pepper.
- Roast for 30 minutes. Top with Parmesan.
