  1. Cut the cucumber into ribbons using a mandoline or knife. 
  2. Slice radishes and chop up scallions. 
  3. In a small bowl, combine olive oil, rice vinegar and sesame oil. Season with salt and pepper. 
  4. Arrange cucumber and radishes on a platter Drizzle with dressing and garnish with scallions.
